On my journey to re-invent my self and make me happier instead of all the people around me. I found this great book called, The Happiness Project, written by Gretchen Rubin.
In this book Gretchen has an epiphany one rainy afternoon where she realizes “Time is passing, and I’m not focusing enough on the things that really matter”… And in that moment she decided to dedicate a year of her life to her happiness project.
I really love this book, it helped me a great deal on my journey. I hope it can help someone else…
Garlic marinated chicken breasts, sauteed on a sizzling skillet of onions, peppers and melted American and Mexican cheeses served over Creamy Mashed Potatoes.
TGI Friday’s Sizzling Chicken & Cheese
2 (4-oz.) chicken breasts
tablespoons olive oil
1 teaspoon chopped garlic
1/2 cup of shredded chihuahua white cheese
2 slices of American cheese
2 tablespoons chopped garlic
2 tablespoons chopped parsley
2 olive oil
1 teaspoon crushed red chilies
1/4 teaspoon black pepper
1/4 teaspoon salt
1 green pepper
1 red pepper
1 yellow pepper
Cast iron skillet with wooden liner
Chicken Breasts and Marinade: Pound chicken breasts to even thickness (place in a plastic bag, let air out of bag and seal to eliminate splattering on counter tops and eliminating any food safety concerns) Combine all marinade ingredients. Place chicken breasts in marinade; refrigerate for 2 to 4 hours
Pepper and Onion: Slice peppers and onions into strips. Saute peppers and onions in olive oil until al dente Season with salt and pepper.
Cook Chicken Breasts: Saute chicken breasts in olive oil over medium heat; cook evenly on both sides to a golden brown color. Heat the cast iron skillet on a burner over medium heat until very hot Using tongs, transfer skillet to wooden liner
Serving: Place mashed potatoes on top portion of skillet place cheeses on bottom portion of skillet and cover with pepper and onion medley. Add chicken to top of pepper and onion medley, resting on potatoes. Top with chopped parsley Serve “sizzling”
